Naan Bread!

Yesterday I soaked a big bowl of chickpeas. Today I cooked them so that I can make some spicy dried chickpea snacks. (My family's favorite!) I saved 2 cups of the soaked, cooked chick peas to make this naan bread! Naan bread can be eaten at a meal, with soup, as a snack with salsa or hummus or even with nut butter. Naan bread can even be used as a pizza crust for individual pizzas! I enjoy naan bread even on its own it's so delicious in so many ways, and it's good for you too! Here's the recipe...
1 tsp corriander
1 tsp cumin
1 tsp sea salt
2 tbsp yeast
1tsp (or a bit less) honey
1 cup warm water + 1/4 cup warm water
1 tsp applecider vinegar
1/2 cup chickpea flour
1/2 cup buckwheat flour
1/4 cup tapioca flour
2 cups of soaked & cooked chickpeas
olive oil
Mix the 3 flours with the cup of warm water & apple cider vinegar. Do this either before bed or first thing in the morning, so that this bowl can sit on your counter either overnight or for the day, to allow the grains to start the sprouting process to allow you to digest them easier & get the most nutrients posible.
Measure the yeast and 1/4 cup of warm water & honey into a glass bowl & let sit while you do the next steps.
In a bowl put the spices & chickpeas. Use a hand held blender & blend (or mash) the chickpeas (you may need to add a little water &/or batter so that the chickpeas don't shoot all over the place when blending.) Add the rest of the batter & the yeast mixture to the bowl & mix well.
If the batter seems thick you can add some more water, a little bit at a time untill it is the consistancy of pancake batter. (you can always try cooking a few & adding more water if they seem too thick. But you don't want it to be liquid like crepes either)
Heat the olive oil in a fry pan (I like my cast iron fry pan the best). Once the oil is heated then spoon in the batter, about 1/4 cup at a time, & cook like you do pancakes. The batter will start to cook around the edges & the middle will bubble. This is how you will know to flip them. If they fall apart when you go to flip them then they need to left longer to cook before flipping. As they are cooked you may place them on a plate in the oven on warm until they are all cooked.
Serve warm or freeze for a later date.
