Apple Pancakes

Serve warm with cheese slices in between as a sandwich or with a little maple syrup or other toppings, or even on their own!
Ingredients
2 medium - large apples
3 eggs
3 tbsp melted coconut oil or grass fed butter
3 tbsp coconut milk
½ tsp sea salt
1 tsp cinnamon
3 tbsp coconut flour
Preparation
In a bowl whisk together the eggs, melted coconut oil or butter, milk, cinnamon & salt.
Then add the coconut flour and stir until evenly mixed. Let stand for 5 min.
While waiting heat the coconut oil or butter (I like to add a little olive oil too & I prefer my cast iron fry pan) and also slice the apples into rings after coring them. (I use my apple corer to make this step easy then slice the rings to desired thickness)
Now check the batter and make sure it is pancake consistency. If it is too thick add water or coconut milk 1 tbsp at a time until batter is thinned out. If too runny add a little coconut flour a bit at a time.
Dip apples into the batter and cook in the warm oil. You may need to use your hands to help rub some batter onto apple rings and add more to the other side once in the fry pan. Batter will firm around the edges and turn golden brown, flip and do the other side.
