Easy Cookie Cutter Cookies ~ healthy

Here's a Fun Recipe that you can make with your family, or if you are on your own then you can have fun making these cookies & then share them with someone you know who is also alone. Remember we are not alone, so reach out & let others know that they are not alone either! These cookies are not only fun & delicious but they are healthy too!!!
INGREDIENTS
1 cup almond flour
1/4 cup coconut flour
1/4 cup maple syrup or raw honey
1/2 tsp baking soda
1/8 tsp salt
1 free range egg
2 tsp vanilla
2 Tbsp coconut oil
extra ingredients ~ coconut sugar, carrob or chocolate chips, unsweetended coconut flakes, or any other decorating ingredients you'd enjoy, plus arrowroot flour for dusting.
DIRECTIONS
~Preheat oven 350 degrees
~Place the dry ingredients in a bowl & whisk
~Add all the wet ingredients, except the coconut oil. Use a handheld mixer on medium setting to blend. Turn to low setting & add the coconut oil. Blend until all mixed.
~You can either make round cookies or cut out cookies.
FOR ROUND COOKIES ~ drop by the Tbsp onto a parchment lines cookie sheet. You can sprinkle with coconut sugar or other toppings. Bake for 11-13 minutes.
FOR COOKIE CUTTER COOKIES ~ refrigerate the dough for a few hours. Place the dough between arrowroot dusted parchment paper & roll out to 1/4 inch thick. Use your choice of cookie cutters. Place the cookies onto a parchment lined cookie sheet. Any left over dough peices roll out again & cut out more cookies, continue to do this until the dough is gone. (trick ~ you can push the very last of the dough inside one of your cookie cutters to create the shape) Decorate the cookies with coconut sugar (I coloured mine with beet juice) & other toppings & baken for 12-15 minutes or until the edges are browned. Cool for at least 5 minutes before removing the cookies from the tray.
